Pan Seared Salmon on Turnip Greens Gnocchi

HELLO FROM ST. JOHN'S!

It's been almost a month since I last posted a recipe. Visited California for 20 something days, went back to Guelph for my #Last24 sessions, observed the Toronto Children's Chorus at Oakville for a week, moved out, moved in, and here I am now! On a completely different note, a HUGE THANK YOU to all the clients in my #Last24 sessions. Thank you for being so accommodating to my schedule. Selling 20 out of 24 sessions in such a short notice was something I didn't expect at all!

It's been three days since I moved to Newfoundland - and I must admit, I miss Guelph quite a bit. Hope you Gryphons are doing well! Sending loves from 3225km away (do you know you can drive from Guelph to St. John's? It's only 39 hours!). 

Settling down means time to cook again! Went to local groceries yesterday and I picked up 2 Newfoundland ingredients: turnip greens and Atlantic salmon - to celebrate my move!

PAN SEARED SALMON ON TURNIP GREENS GNOCCHI // 2 SERVINGS

Feel free to (in fact, PLEASE!) substitute turnip greens and Atlantic salmon with any locally source ingredients you can find. Eat local, think global! ❤️️🌍

INGREDIENTS

- 3 handfuls of gnocchi (more if you're hungry!)
- 1 bowl of turnip greens
- 1 cup of Alfredo sauce (OR marinara OR basil pesto)
- 2 pieces of salmon
- 2 tablespoon of vegetable oil (any oil with high smoke point and doesn't burn fast will do)
- 2 tablespoon of butter
- agak-agak amount of salt and pepper

INSTRUCTIONS

Cook gnocchi following instructions on the package. Like cooking pasta, don't forget to salt your water.

While waiting for gnocchi to cook, pan sear the salmon with vegetable oil (butter burn fast!). Always skin-side down first when frying fish. This ensures an even and crispy sear. Then, the other side. Do not be tempted to flip the fish before it's ready. You know it's ready when it doesn't stick to the pan anymore. Ideally, you want to flip the fillet only once.

The gnocchi should be ready by now and so is the fish. Strain gnocchi and remove fish from the pan. Set aside. 

Add 2 tablespoon of butter into the frying pan used to fry salmon and fry boiled gnocchi over medium heat until golden brown. Add more butter or oil if gnocchi are sticking to the pan. 

Add a clove of finely chopped garlic in the pan, stir fry until fragrant. 

Stir in turnip greens and sauce of your choice.

Lastly, season with salt and pepper.
