Tofu hummus? It sure sounds like a weird dipping to make. Yup, that's exactly what I thought 3 years ago when I had this "Mystery Box Challenge"!

It was 2014 reading week. My foodie friends - Jaclyna, Joy, Ester, Yungxin, Pallak and I challenged each other to cook a 3-or more-course-lunch with mystery ingredients or on a budget (like one of those cooking challenges in Masterchef). My roommate, Yungxin and I got a "Team/Mystery Box Challenge" and we were asked to make an unusual tofu appetizer. Thanks to the "Mystery Box Challenge", tofu hummus was accidentally created and it has to be one of the most original and creative recipes I've ever came up with.

TOFU HUMMUS // 2 mason jars

This is a one-step-blend-it-all recipe that makes it an excellent recipe to practice your agak-agak (estimating measurements to taste) skill. For those of you who don't feel comfortable to go completely agak-agak, my suggestion is that, have a fixed amount of the main ingredient(s), then feel free to play with the rest of the measurements. Think of the tofu (main ingredient) as the constant variable; your preference as the responding variable; the other ingredients as the manipulating variable that shapes the smell, taste, and consistency. 

Have fun tasting and adjusting! Agak-agak je lah!

INGREDIENTS

- 1 box (450g) of medium-firm or firm tofu
- 1 small carrot (for sweetness and colour)
- 1 handful of cilantro
- 1/2 yellow onion
- 4 cloves of garlic
- 1 tbsp dried dill
- 1 cup of olive oil
- soy sauce (or salt)
- brown sugar (or more carrots)
- black pepper


INSTRUCTIONS

Blend tofu, carrot, cilantro, yellow onion, garlic and half of the olive oil to get it going.

Adjust the amount of olive oil as needed to get a creamy texture. Feel free to add some water if it's too thick.

Season with soy sauce, sugar, pepper and dill. Taste and adjust to preference. 

Serve with tortilla chips, crackers and vegetables!
