Crab "Crostini"

Crab "Crostini"

As we transition from Spring to Summer, I'm finding myself craving for something cold and light. So, for the first recipe, I thought why not making something summer-y, simple and fast, but sure to impress? But oh boy, "planning" a blog post is a lot more different than planning Instagram posts. Kodos to all the social media influencers and content creators out there! Pheww, but I'm sure it'll get better with practice!

Anyway, instead of planning a recipe, get the ingredients, cook, style, and finally photograph it, I thought I should go back to my usual route, INSPIRED-BY-WHATEVER'S-ON-SALE aka makcik (housewife/auntie/ahjumma) style. I found crab sticks ($12.69 for 4 packs) and naan crisps ($6.99 for 2 medium-sized bags) on sales at Costco, hence this week's recipe!

CRAB "CROSTINI" // SERVES 4

This is good for 4, or maybe just 1. It really depends on whether you plan it to be an appetizer or a snack. I got naan crisp simply because it's on sales. Grilled baguettes, tostadas, unsalted potato chips (crab sticks and mayo are salty), lettuce cups or anything crispy that can hold the crab would do.

INGREDIENTS

- 1 pack of coarsely shredded crab sticks
- "Agak-agak je lah" amount of mayonnaise
- Naan crisps
- 1/4 of yellow onion, finely chopped (optional, adjust to spice preference)
- 1 julienned green onions (for garnish)

INSTRUCTIONS

Shred the crab sticks to the size you like. I found them best chunky so you can really taste the layers of flavours between crab sticks and mayo.

In a large bowl, combine crab sticks, mayonnaise and chopped onions into the bowl (add mayonnaise and onions as much or as little as you'd like). Agak-agak je lah!

Serve it on naan crisps, or any "crisp" of your choice.

UPDATES: I brought these crab crostini to my choir potluck this afternoon, and came back with an empty tupperware. Tested and approved! :D
